Sofrito Mussels
Get ready to get a little dirty, its supposed to be fun!
You can use beer to deglaze and open up the mussels if you don’t have any wine on hand. The chorizo can be easily omitted. You can replace the shallots with yellow/cooking onions.
A crusty bread is crucial to this recipe, you are going to want to soak up all that goodness!
Ingredients
1 Spanish chorizo, diced
1 large shallot, finely diced
10 garlic cloves, minced
1 cup canned diced tomatoes
1lb fresh mussels
250ml white wine/beer
1 lemon, juiced
Parsley, chopped
Olive Oil
Crusty Bread (for serving)
Heat up oil in large pot on medium. Add chorizo and sauté for 5 minutes. Add shallots and continue cooking for about 5 more minutes. Add garlic and cook for another minute or two. Add canned tomatoes and cook for another 5 minutes.
